Ingredients

  • 225g self-raising flour

  • 125g unsalted butter

Method

  1. Preheat the oven to 180°C (160°C fan)/350°F/gas mark 4.

  3. Add the dark brown sugar and caster sugar to the bowl and mix together.
  4. In a separate bowl, whisk together the eggs.

  7. Add the melted butter mixture and the whisked eggs to the mixing bowl with the dry ingredients and mix until well combined.
  8. Add the milk to the mixing bowl and mix until the batter is smooth.
  9. Pour the batter into a greased and lined 20cm cake tin.
  10. Bake in the preheated oven for 40-45 minutes or until a skewer inserted into the centre of the cake comes out clean.
  11. Allow the cake to cool in the tin for 10-15 minutes before turning it out onto a wire rack to cool completely.
