Ingredients

  • 2 cups basmati rice

  • 2 cinnamon sticks
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 2 tomatoes (chopped)
  • 1 cup yogurt
  • 1/2 cup milk
  • 1/4 cup ghee or oil
  • Salt to taste
  • Fresh coriander leaves (chopped)
  • Fried onions for garnishing

Method

  1. Wash the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
  2. Heat the ghee or oil in a large pot. Add the sliced onions and fry until they turn golden brown.
  3. Add the minced garlic and ginger and fry for 1-2 minutes.
  4. Add the chicken pieces and fry until they turn brown on all sides.
  5. Add the bay leaves, cloves, cinnamon sticks, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Stir well.
  6. Add the chopped tomatoes and fry until they become soft.
  7. Add the yogurt and mix well. Cook for 5 minutes.
  8. Drain the soaked rice and add it to the pot. Mix well with the chicken mixture.
  9. Add enough water to cover the rice. Bring the mixture to a boil and then reduce the heat to low. Cover the pot and let it cook for 20-25 minutes or until the rice is cooked.
  10. Heat the milk in a skillet. When it boils, turn off the heat and pour it over the rice. Cover the pot and let it rest for 10 minutes.
  11. Garnish with chopped coriander leaves and fried onions. Serve hot.
